EASY GUACAMOLE
A delicious, very easy guacamole that is ready in minutes. I served it atop burgers for a fun supper alongside potato skin fries (click for recipe), which are great during pre-maintenance or maintenance. Keep the potatoes for the rest of the family or a dear neighbor.
1 large avocado or 2 small avocados
1/2
tsp minced garlic (2 mL)
(I used the bottled kind)
Salt and pepper, to taste
1 Roma tomato, chopped
1/4
cup chopped green onions (60 mL)
1 tbsp chopped cilantro, OR parsley (15 mL)
1 tbsp freshly-squeezed lemon juice, (15 mL)
OR lime juice
Hot sauce, if desired, to taste
Peel
avocado and mash with a fork; place in a medium-sized bowl. Add garlic and salt and pepper, to
taste. Stir in tomato, green onions and
cilantro, OR parsley. Sprinkle lemon, OR lime juice
over guacamole and stir in. Add hot sauce,
if desired and stir in. Serve
immediately.
