HOT SLOPPY JOE
This savory meat is ever so tasty! I loved it served on my favorite low-carb buns. It has a rich flavor and taste. Fantastic and I am sure you will love it, too! You could even serve it over cauli-rice or alongside cauli-mash and a green vegetable. You won’t be sorry if you try this recipe. This is an adaptation of a famous chef's recipe.
2 lbs lean ground beef (0.9 kg)
2 green bell peppers, diced
1 tbsp minced garlic (15 mL)
Liquid sweetener to equal 1 tbsp (15 mL)
2 tsp spicy brown mustard, OR (10 mL)
Dijon mustard
11/2 tsp salt (7 mL)
1 tsp black pepper (5 mL)
1/2
tsp molasses, optional (2 mL)
Low-Carb Ketchup (recipe follows)
1 cup chicken stock (250 mL)
1/2
cup shredded Mozzarella, OR Cheddar cheese (125 mL)
Low-Carb Ketchup:
51/2 oz tomato paste (2 mL)
1/2
cup water (125 mL)
Liquid sweetener to equal 1/3 cup (75 mL)
3 tbsp vinegar (45 mL)
1 tbsp lemon juice (15 mL)
1/2
tsp onion powder (2 mL)
(optional)
1/2
tsp salt (2 mL)
1/4
tsp garlic powder (1 mL)
1/4
tsp black pepper (1 mL)
In large nonstick frying pan, over medium heat, cook ground beef. Break up the meat with the spatula to be finer in texture. When the meat begins to brown, add green bell peppers, minced garlic, liquid sweetener, spicy brown mustard, OR Dijon mustard, salt, black pepper, molasses (if using), Low-Carb Ketchup and chicken stock. Stir to combine well and keep cooking until the mixture is thick with not too much liquid left. Add a little extra water while cooking if necessary.
Low-Carb Ketchup: In medium bowl, whisk together, tomato paste,
water, liquid sweetener, vinegar, lemon juice, onion powder (if using), salt,
garlic powder and black pepper.
Yield: 10 servings (without the bun factored in)
