All the deliciousness and flavor of a Big Mac in a Big Mac Meat Loaf for making an at-home weeknight supper. Kids are bound to approve.
It is so easy to prepare. Mix the meat loaf ingredients in a big bowl and free form a loaf on parchment paper on a baking sheet. Top with Cheddar cheese and the rest of the meat. Bake and when it is done cover with the Big Mac Sauce.
If you like, you can even add cooked bacon to the center filling along with pickles or sprinkle bacon bits over the Big Mac Sauce.
This meat loaf can be frozen, if desired. The big mac meatloaf can be part of a Keto diet or low-carb diet. It is also gluten-free.
Coconut flour binds meat loaf very well; however, I have read that some people use crushed pork rinds successfully.
Keep leftovers in an airtight container in the fridge. This meatloaf mixture keeps very well.
INGREDIENTS:
Big Mac Sauce:
1/2 cup mayonnaise (125 mL)
2 tbsp sugar free ketchup, OR French Dressing (30 mL)
4 tsp dill pickle relish, OR (20 mL)
Finely chopped green onion
1 tbsp finely minced white onion (15 ml)
1 tsp white vinegar (5 mL)
1 tsp sweetener (5 mL)
1/8 tsp salt (0.5 mL)
Meat Loaf:
2 lbs lean ground beef (0.9 kg)
2 tbsp coconut flour (30 mL)
2 tbsp sugar-free ketchup (30 mL)
2 tsp minced garlic (10 mL)
1 large egg
2 tsp salt (10 mL)
2 tsp onion powder (10 mL)
1/2 tsp black pepper (2 mL)
4 oz sharp Cheddar cheese, cut thickly (125 g)
INSTRUCTIONS:
Preheat the oven to 350°F (180°C). Line a large loaf pan with parchment paper. That is what I did, but in hindsight, I would free form this meat loaf on a parchment lined cookie sheet, with a ridge around the edges. The reason being, you can make doubly sure that the cheese stays inside, by covering the sides well with meat.
Big Mac Sauce: In medium bowl, whisk together mayonnaise, sugar-free ketchup, OR French Dressing, dill pickle relish, minced white onion, white vinegar, sweetener and salt. Set aside.
Meat Loaf: In large bowl, combine lean ground beef, coconut flour, sugar-free ketchup and minced garlic. In small bowl, whisk egg, salt, onion powder and black pepper. Add to ground beef and mix well. I like to use plastic disposable gloves for this task.
Place half the ground beef mixture on the prepared cookie sheet. Top with Cheddar cheese slices and then the remainder of the ground beef, making sure to enclose the cheese very well on the sides. Bake approximately 1 hour. Let rest 10 minutes. Transfer to a meat platter and top with the Big Mac Sauce.
