CHICKEN CORDON BLEU DIP

A delicious recipe with all the yummy flavors of familiar Chicken Cordon Bleu and yet some.  The cream cheese makes this dip creamy-good! I made this for a party and it was the first dish to disappear. Serve with pork rinds, low-carb crackers, veggie sticks, cucumber rounds, etc.  

16 oz regular cream cheese, softened (500 g)
1/cup sour cream (60 mL)
2 tbsp mayonnaise (30 mL)
1 tbsp Dijon mustard (15 mL)
11/cups chopped deli ham, divided (375 mL)
13/cups grated Swiss cheese, (425 mL)
  divided
1 cup chopped, cooked chicken (250 mL)

Preheat oven to 350°F (180°C).

In food processor or bowl of mixer, process cream cheese, sour cream, mayonnaise and Dijon mustard until smooth.  Stir in 1 cup (250 mL) ham, 11/cups (300 mL) grated Swiss cheese and cooked chicken.  Place mixture in 1-qt (1 L) casserole dish and top with the remaining ham and Swiss cheese.  Bake  20 to 25 minutes, or until hot and bubbly.
