CHOCOLATE-COVERED PEANUT CRUNCH BALLS





CHOCOLATE-COVERED PEANUT CRUNCH BALLS

These would make a nice treat anytime.  Satisfying treat with plenty of protein as well.  These will not last too long.

1/2 cup peanut butter (125 mL)

Liquid sweetener(sucralose or stevia) to equal 2/3 cup sugar (150 mL)

1/4 cup vanilla whey protein (60 mL)

2 tbsp unsalted butter, melted (30 mL)

1 tsp vanilla extract (5 mL)

3/4 cup finely chopped peanuts (175 mL)

Chocolate Coating:

1 cup sugar-free chocolate chips, OR this one, OR (250 mL)

  1/2 cup chocolate chips PLUS 3 oz Baker's unsweetened chocolate

1 tbsp unsalted butter (15 mL)

 

In food processor, process peanut butter, liquid sweetener, vanilla whey protein, melted butter and vanilla extract.  Stir in chopped peanuts.  Form into small 1-inch (2.5 cm) balls. 

Chocolate Coating:  In double boiler, melt chocolate chips, OR a mix of chocolate chips and Baker's unsweetened chocolate (add some liquid sweetener, if desired) and butter.  Roll balls in melted chocolate using a fork or spoon.  Place on wax paper-covered cookie sheet.  Freeze just until chocolate is set and then refrigerate.
