Tastes sinfully delicious!  This is a very smooth fudge.  If you prefer some texture, add some chopped peanuts or walnuts.  I use a food processor to chop my nuts; just pulse until you have the correct size pieces.  I think you will love this fudge.  It is very good.  Using unsweetened baker's chocolate, you don't need much in the way of chocolate chips either.  The whey protein adds a nice dose of protein which doesn't hurt.


2 oz unsweetened baking chocolate (60 g)

1/2 cup sugar-free chocolate chips, OR this one (125 mL)

  (Walmart has 2 kinds, Hershey's and Bake Believe)

1/2 cup whipping cream (125 mL)

1 tsp unflavored gelatin (5 mL)

2 tbsp whipping cream (25 mL)

4 oz regular cream cheese, softened (125 g)

Liquid sweetener (sucralose or stevia) to equal 1/3 cup sugar (75 mL)

1/3 cup powdered sweetener of choice, OR (75 mL)

  coffee sweetener packets

1/2 cup vanilla whey protein (50 mL)

1/4 cup peanut butter (50 mL)

  (I used Skippy Natural)

1/2 tsp vanilla extract (2 mL)


In double boiler (or use one bigger pan with 1-inch (2.5 cm) water in it and a smaller one on top, or use a good nonstick pan over medium low heat) over medium heat, melt unsweetened chocolate and chocolate chips in 1/2 cup (125 mL) whipping cream. Remove from heat, add gelatin softened in 2 tbsp (25 mL) whipping cream, stirring until chocolate is dark, smooth and thickened. 

In food processor with sharp blade or blender, process cream cheese.  Add liquid sweetener, powdered sweetener, OR coffee sweetener, whey protein powder, peanut butter and vanilla extract; process.  Add chocolate; process until smooth.  Turn out into 8 x 4-inch (20 x 10 cm) loaf pan.  Press into pan firmly and refrigerate until set.  Cut into small squares.

Helpful Hints:  I buy my vanilla whey protein powder from Walmart.  It is inexpensive and lasts a very long time.  There are two different brands; both great!
