This meal could not be easier to prepare and then the oven does the rest!  Considering the ease of preparation, this is a very tasty chicken dinner.  I hope you will enjoy it as much as we did.


4 large chicken breasts

Cheesy Topping:

1/2 cup mayonnaise (125 mL)

3/4 cup grated Cheddar cheese, divided (175 mL)

2 tbsp grated Parmesan cheese, (30 mL)

  (the kind in a canister is fine)

1/2 tsp seasoning salt (2 mL)

1/2 tsp black pepper (2 mL)

1/2 tsp dried parsley (2 mL) 


Preheat the oven to 375°F (190°C). 

Place chicken breasts in a 1 qt (1 L) casserole dish.

Cheesy Topping: In medium bowl, combine mayonnaise, 1/4 cup (60 mL) Cheddar cheese, Parmesan cheese, seasoning salt, black pepper and parsley. 

Spread mixture evenly over top of each chicken breast.  Sprinkle remaining Cheddar cheese over top.  Bake 30 minutes and check to see whether the chicken is cooked through.  If not, bake another 5 to 10 minutes.  If need be, broil 1 to 2 minutes under broiler to brown.  (I didn't need to do that.)
