Lovely classic flavors in this satisfying chicken salad.  Makes a nice, quick lunch on busy days and with so much flavor happening in this salad, you'll be happy you tried it.

1 green bell pepper (OR mix of green and red), finely diced

1/2 red onion, diced

2 tbsp lime juice (30 mL)

11/2 lbs rotisserie chicken, cubed (0.680 kg)

2/3 cup mayonnaise* (150 mL)

1/2 tsp chili powder (2 mL)

1/2 tsp ground cumin (2 mL)

1/2 tsp salt (2 mL)

1/4 tsp black pepper (1 mL)

1/8 tsp paprika, optional (0.5 mL)

1/4 cup chopped fresh cilantro, OR parsley (60 mL)


In small bowl, place green pepper and red onion.  Sprinkle with lime juice and set aside vegetables to soften while preparing the dressing. 

In medium bowl, place chicken. 

In small bowl, combine mayonnaise, chili powder, cumin, salt, black pepper and paprika.  Add vegetables to the chicken and stir dressing into the chicken mixture to combine well.  Then add cilantro, OR parsley, mix (keeping some for the top of the salad for garnish). 

Helpful Hints:  You can replace half the mayonnaise with Greek yogurt or sour cream, if desired.  To make short work of chopping the vegetables finely, use a food processor and use the pulse button!  Works quickly and no work at all practically.
