LOADED CHICKEN SALAD

This salad made a quick and easy lunch.  I adore chicken salads and love the fact that they satiate so nicely.  I used what I had on hand and it turned out great! 


4 cups chopped rotisserie chicken, (1 L)

  OR shredded cooked chicken

1 cup sliced celery (250 mL)

1 cup chopped cucumber (250 mL)

1 small apple, chopped (optional)

1/cup chopped pecans (60 mL)

4 slices bacon, cooked, chopped

Dijon Mayonnaise Dressing:

3/4 cup mayonnaise (175 mL)

1/2 cup sour cream (125 mL)

2 tsp Dijon mustard (10 mL)

Liquid sweetener to equal 1 tsp sugar (5 mL)

1/2 tsp seasoned salt (2 mL)

1/4 tsp black pepper (1 mL)


 In large bowl, combine chicken, celery, cucumber and apple, if using.

Dijon Mayonnaise Dressing:  In medium bowl, combine mayonnaise, sour cream, Dijon mustard, liquid sweetener, seasoned salt and black pepper.  Add to chicken mixture and mix well. Transfer to a salad bowl.  Sprinkle top of the salad in the salad bowl with chopped pecans and chopped bacon, just before serving.
