An easy, quick and flavorful side with dried basil, Italian seasoning and crushed red pepper flakes as well as crushed garlic.


2 tbsp olive oil (30 mL)

1 large onion, sliced

1/2 tsp baking soda (7 mL)

1 tbsp olive oil (15 mL)

3 large bell peppers, sliced

2 tsp dried basil (10 mL)

1 tsp Italian seasoning (5 mL)

1/4 tsp crushed red pepper flakes (1 mL)

2 tsp crushed garlic (10 mL)

1/2 tsp salt (2 mL)

1/4 tsp black pepper (2 mL)

  (double the amount if skipping red pepper flakes)

In large nonstick frying pan, over medium heat and in 2 tbsp (30 mL) olive oil, cook onions 8 minutes or until turning soft and slightly brown.  Add baking soda and stir fry briefly until turning brown.  Add 1 tbsp (15 mL) more oil and peppers.  Cook until cooked to the tenderness you desire.   Add basil, Italian seasoning and red pepper flakes while the peppers are cooking.  Move vegetables aside in the pan and add garlic; cook 2 minutes.  Add salt and pepper and toss to combine all.
