“HONEY” MUSTARD SAUCE CHICKEN WITH BACON

Easy and quick pan-fried chicken meal, that is uber-tasty and taken over the top with the surprise addition of bacon!


“Honey” Mustard Sauce:

1/4 cup honey substitute (Walmart also has one) (60 mL)

1/4 cup heavy cream (60 mL)

2 tbsp mustard (30 mL)

1 tbsp minced garlic (15 mL)

1 tbsp water (15 mL)

1/2 tsp cornstarch (2 mL)

Chicken:

2 large chicken breasts, sliced in half longitudinally

Salt and pepper, to taste

2 tbsp butter (30 mL)

1 tsp dried parsley (5 mL)

4 slices bacon, cooked and diced 

 

“Honey” Mustard Sauce: In small bowl, combine honey substitute, mustard and minced garlic. In small bowl, whisk water and cornstarch. Stir into sauce. 

Chicken: Season chicken breasts with salt and pepper on both sides. 

In large nonstick frying pan, in butter and over medium heat, cook seasoned chicken cutlets about 3 minutes on the one side.  While cooking the second side, pour sauce over the chicken.  Continue cooking over medium low heat until the chicken is cooked through.  Sprinkle with dried parsley, and garnish with bacon.
