PEPPERS, ONIONS AND CREAM CHEESE CUBES

This is an unusual side with a normal peppers and onion stir-fry and at the end cubes of cream cheese are added and briefly and gently heated. The soft, molten  cream cheese cubes in the stir-fried vegetables add interest, texture contrast and flavor, as well as they make the side more satiating..  Try it sometime!



2 tbsp light-tasting olive oil (30 mL)

1 cup diced onion (250 mL)

1 red pepper, seeded and chopped

1 green pepper, seeded and chopped

1 yellow pepper, seeded and chopped

1/2 tsp salt (2 mL)

1/8 tsp black pepper (0.5 mL)

4 oz cream cheese, cubed (125 g)


In large frying pan in olive oil and over medium head, fry onion until turning soft.  Add peppers and cook until turning soft, stirring often.  Sprinkle with salt and pepper while cooking.  At the end at the cubed cream cheese and briefly and gently heat.  Serve right away.
