GARLIC BUTTER MUSHROOMS AND ONIONS

This is a delicious, quick and simple recipe as a great side for just about any entrée.  Once cooked, the side dish is garnished with shredded Cheddar cheese and bacon bits.  How can one go wrong with such ingredients?


3 tbsp butter, divided (45 mL)

1 lb sliced mushrooms (0.45 kg)

1 cup chopped onions (250 mL)

2 tsp minced garlic (10 mL)

1 tsp dried parsley (5 mL)

1/2 tsp salt (2 mL)

1/4 tsp black pepper (1 mL)

1/4 cup shredded Cheddar cheese (60 mL)

1 slice bacon, cooked and crumbled

 

In large nonstick, frying pan, over medium heat in 2 tbsp (30 mL) butter, cook mushrooms and onions until all moisture evaporates.  Add 1 tbsp (15 mL) butter and cook garlic with the vegetables 2 minutes, sprinkling with parsley, salt and black pepper,  Place on a plate and sprinkle with Cheddar cheese and bacon.  I nuked the mushroom dish very briefly to melt the cheese.
