NO-BAKE PEANUT BUTTER JUMBLE COOKIES



Above - before placing in the refrigerator for 20 minutes and taking the photo below.  They become even firmer as the hours go by.  Keep them chilled.  A couple of these at breakfast time with a cup of tea keeps me satiated for hours.



 

NO-BAKE PEANUT BUTTER JUMBLE COOKIES

These cookies are rather candy-like.  They are also very flexible.  You can play with the ratios and the add-ins.  They have a smooth texture broken up by the crunch of the walnuts and the sweet white chocolate chips.  To have a firmer cookie, use some vanilla whey protein powder, which adds some more goodness to these cookies. I made these cookies pictured without the whey protein powder. They dry out in the refrigerator if placed on a plate uncovered, and become firmer anyway.  I like the recipe as written; however, as I mentioned you can play with this recipe to your heart's content. Even just one with your tea or coffee is very satiating and can help stave off hunger until the next meal. I mentioned the peanut butter I used as results will vary with, for instance, a saltier peanut butter.

 

1 cup peanut butter (250 mL)

  (I use Skippy Natural)

Sweeetener of choice to equal 1/cup sugar (125 mL)

1 oz cocoa butter, melted OR (30 g)

  unsweetened Baker’s® chocolate

1 tbsp heavy cream (15 mL)

1/2 tsp vanilla extract (2 mL)

1/4 tsp almond extract (1 mL)

1/4 cup vanilla whey protein powder (60 mL)

  (optional)

2/3 cup chopped walnuts (150 mL)

1/3 cup white, OR sugar-free dark chocolate chips, (75 mL)

  OR this one 

 

In food processor, or in bowl with mixer, process peanut butter, sweetener, cocoa butter (I nuke the cocoa butter to melt it), OR Baker’s® chocolate, heavy cream, vanilla extract and almond extract.  Stir in walnuts and white or dark chocolate chips.


Drop slightly heaped tablespoons of dough onto parchment-lined cookie sheet.  Freeze for 10 minutes and refrigerate.


Yield:  18 cookies
