ITALIAN CABBAGE AND BACON STIR FRY

Cabbage stir fry is one of those sides that you can add a number of things to and cook it all together in one large frying pan.  At first you have a big mountain of cabbage and whatever else you add to it, but pretty soon it cooks down nicely as the cabbage softens.  This is another great cabbage side dish with a slightly different flavor profile to others I have made.


4 slices bacon

8 cups chopped cabbage (2 L)

1 cup chopped onion (250 mL)

1 green pepper, chopped

1/2 cup chicken stock (125 mL)

1 teaspoon seasoning salt (5 mL)

  (reduce by half if using commercial

  chicken stock)

1 tsp Italian seasoning (5 mL)

1/4 tsp black pepper (1 mL)

 

In large frying pan, cook bacon and set aside to cool; once cool use kitchen shears to cut the bacon into small pieces.

 

In bacon fat, and over medium heat, add cabbage, onions, green pepper and chicken stock.  Cook until cabbage is beginning to soften.  Sprinkle with seasoning salt, Italian seasoning and black pepper.  Continue to cook until the cabbage has softened to your liking (I like it soft and no longer crunchy).
