TURKISH MOUSSAKA AND HOW TO LOSE WEIGHT BEFORE CHRISTMAS

Most people are familiar with Greek Moussaka.  Turkish Moussaka has different spices and it does not have a white sauce.  It is delicious and great served with fried cauliflower rice. I didn’t use onion in this dish.  Feel free to fry up more eggplant slices as it is quite impossible to resist eating them as they come out of the pan, and you don't want to short-change this wonderful dish.

1 lb 3 oz Japanese Eggplant (0.54 kg)

Seasoning salt, to taste

2 tbsp olive oil (30 mL)

1 large green pepper, chopped

1 tbsp minced garlic (30 mL)

11/2 lbs lean ground beef (0.68 kg)

3 Roma tomatoes, chopped

1 onion, chopped (optional)

3 tbsp tomato paste (45 mL)

Liquid sweetener to equal 1 tbsp sugar (15 mL)

2 tsp dried parsley (10 mL)

11/2 tsp curry powder (7 mL)

11/2 tsp ground cumin (7 mL)

11/2 tsp black pepper (7 mL)

1/2 tsp cinnamon (2 mL)

1/2 cup water (125 mL)

 

Preheat the oven to 400°F (200°C).

 

Slice Japanese epplant thinly.  In olive oil, over medium low heat (#4 on a gas stove), cook eggplant in one layer.  As it begins to brown, flip them, using 2 forks, and cook the other side.  Place on paper towels to absorb excess oil.  Sprinkle very lightly with seasoning salt, tossing to coat.  Repeat until all the eggplant is cooked.  Set aside.

 

In large, nonstick frying pan, in 2 tbsp (30 mL) olive oil, fry green pepper and garlic 3 minutes.  Add ground beef, breaking it up smaller with a spatula from time to time.  Add tomatoes, onion (if using), tomato paste, liquid sweetener, curry powder, cumin, black pepper and cinnamon. Stir well to combine.   Once the meat has browned completely, add water and cook until most of the water has evaporated. 

 

In 9 x 13-inch (23 x 33 cm) glass baking dish, layer half the eggplant slices, half the meat.  Repeat ending with meat.  Press down lightly to even the top.  Bake 15 minutes. If desired garnish with bits of parsley or basil.
