  Some of the cheese melted onto the baking sheet and became crispy.  I scraped those bits off the baking sheet and topped the roasted broccoli with them.  It was such a delicious side and the crispy bits of cheese added extra interest and flavor.

This side fits into a low-carb or stricter keto diet.  This is a great way to add interest and flavor to roasted broccoli. No more boring broccoli!

I used bottled minced garlic, but you could use cloves of garlic instead.  The carbs in this dish are all healthy carbs.  It is very different to have carbs from pasta than it is to have carbs from healthy vegetables like broccoli.

I used a fair amount of salt in this dish, but if you are sodium sensitive, you could replace part of the salt with No salt.

8 cups chopped broccoli (2 L)

  {about 1 lb (k0.45 kg)}

1/3 cup light-tasting olive oil (75 mL)

1 tsp granulated garlic (5 mL)

1 tsp salt (5 mL)

1/4 tsp black pepper (1 mL)

1/4 tsp red pepper flakes, optional (1 mL)

2/3 cup shredded Cheddar cheese (150 mL)



Preheat the oven to 400°F (200°C).  Grease a baking sheet.


Place broccoli in a large bowl.  In small bowl, whisk together olive oil, granulated garlic, salt, black pepper and pepper flakes, if using.  Pour over broccoli and toss to coat well.  Turn out onto greased baking sheet.  Roast 10 minutes.  Check and remove any well done pieces.  Continue roasting another few minutes – maybe 4 minutes more. 

Move the broccoli pieces closer together.  Sprinkle with Cheddar cheese and roast another 8 minutes (keep an eye on it), or you could place under the broiler to melt the cheese, if the broccoli is already tender.
