These are great after a work out or a nice snack to grab out of the fridge.  These are chewy, sweet and very toffee-like.  14 g of protein in one bar.  I find them to be so satiating, that I usually cut them in half and have half at a time.

These are nice to enjoy with a cup of tea or coffee, as you would dessert.  If you want to dessertify (a word?) these more, you could add a drizzle of melted dark chocolate over top. See recipe below.  Use your favorite vanilla whey protein powder in these.  Walmart has some great brands, I find.  I order online, but I am sure you are blessed to have one near you.  Just don't choose a protein powder that is mostly made from protein concentrates - let it have protein isolates in it, too.  I bought one once made from the former and had to throw it away.  It was horrible.  I think nowadays, though, it would be difficult to find such a product in any case, so not to worry too much about that.  That happened to me many years ago.  

If you only have chocolate whey protein powder or unflavored whey protein powder; that is fine - use that, no problem!

Of course, as with almost all no-bake protein bars, you can play with these.  You don't have to use cocoa butter.  You could use dark chocolate, sugarless chocolate chips (2 oz = 1/3 cup) or unsweetened Baker's chocolate.

If you really don't like coconut, you could replace it with sliced almonds that you have processed in a food process until finer.  There are just so many ways to play with these.  You could add dried fruit like dried cranberries or a few raisins, chopped, prunes, chopped, etc. as you feel in the mood.

You can amp up the coconut flavor in these by using 1/4 tsp coconut extract in addition to the vanilla extract.  Don't try and freeze these unless they are already cut into bars as they will freeze rock solid.  You can separate them with parchment paper and place in a sealed container in the freezer.  

Lots of nutrition is packed into a protein bar. Great for before or post workouts.  Hope you enjoy these!


4 oz cream cheese (125 g)

Liquid sweetener to equal 3/4 cup sugar (175 mL)

1/4 cup allulose, OR your favorite sweetener (60 mL)

3 tbsp unsalted butter, softened (45 mL)

1 tsp vanilla extract (5 mL)

2 oz cocoa butter, melted and (60 g)


11/2 cups vanilla whey protein (375 mL)

1 cup shredded coconut (250 mL)

Chocolate Drizzle (optional)
1 oz unsweetened baking chocolate (30 g)
2 tbsp unsalted butter (30 mL)
2 tbsp whipping cream (30 mL)
Liquid sweetener to equal 1/ cup sugar (125 mL)
2 tbsp allulose blend (30 mL)
1/2  tsp vanilla extract (2 mL)


In food processor, process cream cheese, liquid sweetener, allulose (or your favorite sweetener), unsalted butter and vanilla extract.  Add cooled cocoa butter; process.  Add vanilla whey protein powder; process.  Add coconut and process briefly until combined.  Press into well-greased glass 8-inch (20 cm) square baking dish.  Chill just until it is possible to cut them into 8 long protein bars and cut those in half, if desired.  Remove them now if possible as it is easier (before they are fully chilled) and place in a sealed container in the fridge. 

Chocolate Drizzle (Optional):  In small bowl, place chocolate; pour boiling water over chocolate and let sit a few minutes.  Pour off water and pour boiling water over it again until chocolate tests soft to point of knife.  In small bowl, melt butter in microwave oven. Whisk in cream, liquid sweetener, allulose blend and vanilla extract. Whisk in chocolate. Microwave 10 to 15 seconds until liquefied. Use teaspoon to drizzle chocolate over protein bars.  Allow chocolate to set. 

Yield:  8 to 16 servings
