SAUCY CHICKEN, HAM AND SWISS CHEESE BAKE

This recipe has 2 chicken breasts butterflied, topped with a rich creamy sauce, ham and Swiss cheese slices and a light topping of almond flour, Parmesan cheese with a touch of paprika.  It is baked to golden perfection!  However, I missed mentioning the secret to this chicken being so incredibly tender and juicy.  Before doing any of that the chicken is brushed with melted butter and topped with seasoning salt and black pepper, and then everything else is added. Brushing chicken with butter before baking ensures tender, juicy chicken every time! Nothing left now but to bake.  Such an easy recipe and you will be assured of rave reviews, I think!


This recipe is rich-tasting and totally packed with delicious flavor, so pair it with light sides and it will be a good combination. You could even serve it with a lovely full salad.

This recipe is like stuffed chicken but easier.  It uses ordinary ingredients and even Parmesan cheese in a canister.


I used regular cream cheese, but you can also use the spreadable cream cheese that comes in a large tub at Costco.  I used spicy brown mustard, but you can also use regular mustard or dijon mustard.  This is almost like a chicken cordon bleu casserole with a difference.  You can make this in a baking dish or casserole dish.  I used an old cookie sheet.  This meal would be great served with steamed broccoli.  The taste of this chicken casserole is going to win everyone over!


Keep leftovers in the fridge in an airtight container or simply on a plate covered with plastic wrap, as believe me, I don't think it will last all that long, as someone will eat it.


I used the topping of Parmesan cheese and almond flour to kind of mimic breadcrumbs.  It is certainly very tasty.  I love Swiss cheese with this recipe; however in a pinch you could use Cheddar cheese.  The layer of this topping mimics panko breadcrumbs.










 

INGREDIENTS:








2 large chicken breasts

Creamy Spicy Mustard Sauce:

3 oz cream cheese, softened (125 g)

3 tbsp mayonnaise (45 mL)

1 tsp spicy brown mustard (5 mL)

Toppings:

2 tbsp butter, melted (30 mL)

1 tsp seasoning salt (5 mL)

1/2 tsp black pepper (2 mL)

4 slices deli ham

4 slices Swiss cheese

2 tbsp almond flour (30 mL)

2 tbsp Parmesan cheese (30 mL)

1/2 tsp paprika (2 mL)

Garnish:

Cilantro, chopped, OR chopped green onions

 

INSTRUCTIONS:

Preheat the oven to 350°F (180°C).  Grease a cookie sheet real well.

 

Butterfly chicken breasts without cutting all the way through. Cover with plastic wrap.  Use a meat mallet or heavy food can to pound the breasts a bit thinner.

 

In cereal bowl, soften cream cheese in microwave oven (remember to put a lid over the bowl to prevent splattering) and stir in mayonnaise and spicy brown mustard.  Set aside.

 

In small bowl, combine melted butter, seasoning salt and black pepper.  Brush this mixture over the prepared chicken breasts.

 

Spread with all the Creamy Spicy Mustard sauce, covering the chicken well, and then place 2 slices of ham and 2 slices of Swiss cheese on both butterflied chicken breasts. In small bowl, combine almond flour, Parmesan cheese and paprika.  Sprinkle this mixture over the top.  Bake 30 minutes or until chicken cut through the thickest part is white throughout.  Garnish with chopped cilantro, OR chopped green onions.
