CABBAGE, APPLE, ONION AND BACON STIR FRY

It is a keeper recipe and a favorite for my husband and me; at least any of my cabbage stir fries are welcome any time and they go with most meals - even breakfast!  The small apple, diced, is a fabulous flavor enhancer without adding too many extra carbs as the carbs are spread over several servings.

I have noticed that some cooks like to add a tablespoon of apple cider vinegar either during cooking or at the end of cooking.  Some will even add a little sweetener or sugar, but I feel the apple was all the sweetness this dish needed.


Although I used green cabbage, you can also use red cabbage, if desired.  It has a hearty flavor and even more nutrients.  For instance, the vitamin C load is at least 5x more.


This is the perfect vegetable side for any time of year in my opinion.  This cabbage recipe is sure to please.  There are so many ways to prepare cabbage with beef or chicken, besides slices of bacon.  Always use a large skillet, preferably nonstick.  Leftovers should be stored in an airtight container in the fridge.


This flavorful side dish of cabbage is a fairly low-calorie side even with the bacon added.


If desired, you can cook the cabbage in bacon fat instead of olive oil or butter.  It tastes great no matter which you choose.  You can choose to cook bacon crisp if you like crispy bacon or keep it more like ham and tender - our bacon is strangely like ham in consistency at times.  Chopping the bacon is easy enough on a cutting board or use a pair of scissors.


I used a small onion, but you could use a large onion.  This simple side dish is delicious and some prefer to cook it in bacon grease or other cooking fat.  I didn't add garlic because I didn't think it would go with this dish.  It is an easy side dish for everyday.  You can use sweet onion, white onion or shallots.


A teaspoon of salt was all that was needed, but feel free to add to taste.  This sauteed cabbage is delicious with a tablespoon of apple cider vinegar added, if desired.  The bacon tends to add a nice smoky flavor.  A dash of paprika could be added to the dish and even a little chicken stock, if desired.  This is the sort of side dish that one can play with for sure.



 









INGREDIENTS:

Olive oil

1 small onion, diced

1 small head cabbage

1 small apple, diced

1 tsp salt (5 mL)

1/2 tsp black pepper (2 mL)

 1/4 cup water (60 ml)

7 slices bacon, cooked, chopped

 

 

INSTRUCTIONS: 

In large nonstick frying pan, cook onion in olive oil over medium heat until softening. 

 

Cut cabbage in long shreds and cut those in half.  Add to pan along with apple.  Place lid on the pan and cook until the cabbage is softening.  Stir occasionally.  Sprinkle with salt and pepper.  Add water and toss gently to combine.  Cook a little longer and in the last 2 minutes add the chopped, cooked bacon.  Serve right away.
