CREAMY CHEDDAR CHICKEN DELIGHT

This turned out great; very tasty for something so simple which is essentially tender chicken bites with a truly decadent Creamy Cheddar and Green Onion Sauce!  Serve over a bed of fried peppers and onions or any low-carb vegetable pasta substitute or low-carb pasta of choice.


A good amount of garlic is used in this recipe, but the flavorful sauce is what makes this recipe so good.  You could probably use this sauce in other ways as well.  If you like you could double the green onions in the sauce.  I also topped the chicken with more chopped green onions.  I only used the green tops of the green onions.


This is a quick and easy recipe which makes it a wonderful week night meal.


The sauce mixture is rich and creamy with a perfect blend of flavors.  If you like, though, you could add a little thyme to the sauce as well.


You do not need to bake anything for this recipe, however, once cooked, you can place the meal in a baking dish and sprinkle with green onions.  Dish up "pasta" of choice and place some chicken on top.


I used minced garlic from a jar, but you can use garlic powder in a pinch.  Keep leftovers in the refrigerator.  This meal will impress you with the tender texture of the chicken with a delightful cheesy mixture mixed in.  This secret blend will delight.  Juicy chicken breasts are cut into bite-sized pieces.  


Cooked vegetables make a good pasta substitute.  You could even use a bed of cooked cauli rice or spaghetti squash.  This sort of meal lends itself to weeknight dinners.  You could top the chicken with sour cream, if desired.  In a pinch, you could use another cheese such as Mozzarella.  The prep time is quick as is the cook time for the chicken and even the sauce.  This is a tender chicken delight recipe.  Different cheeses will go in the sauce depending on what you have on hand, or depending on your taste buds and what appeals to you.


I used boneless chicken breasts which once cooked  with simple ingredients lend themselves to a creamy sauce which tops the chicken or is mixed in to be precise.  This meal would also be good with a fresh salad on the side.  The tops of the chicken can be graced with more chopped green onions.  If you love bacon, you could top the chicken with bacon bits as well.  The cheesy goodness of the sauce is bound to win you over as this flavor profile doesn't get much better.  If you prefer chicken thighs, they would need to be boneless and you would need a few more, as I used very large chicken breasts.


 









INGREDIENTS:

3 large chicken breasts

1 tsp seasoning salt (5 mL)

1/2 tsp black pepper (2 mL)

2 tbsp olive oil (30 mL)

1 tbsp minced garlic (15 mL)

Creamy Cheddar and Green Onion Sauce:

8 oz cream cheese (250 g)

1 cup shredded Cheddar cheese (250 mL)

1/2 cup heavy cream (125 mL)

1/2 cup water (125 mL)

1/4 cup chopped green onions, tops only (60 mL)

1 tbsp butter (15 mL)

11/2 tsp salt (7 mL)

1 tsp dried parsley (5 mL)

1/4 tsp black pepper (1 mL)

 

INSTRUCTIONS:

Cut the chicken breasts into bite sized pieces.  Sprinkle with seasoning salt and black pepper. 

 

In large frying pan in 1 tbsp (15 mL) olive oil, cook half the chicken, turning after about 4 minutes and cook on the other side (add half the minced garlic towards the end of cooking) until chicken is cooked through. Set aside. Repeat with the remaining chicken pieces and garlic.

 

Creamy Cheddar and Green Onion Sauce:  In nonstick cooking pot, add cream cheese (broken up into chunks), Cheddar cheese, heavy cream, water, green onions, butter, salt, parsley and black pepper.  Stir or whisk frequently until the sauce is smooth and thickened.  Stir in chicken to coat completely; cook 1 minute to heat the chicken again.  Serve over a bed of fried peppers and onions or any low-carb vegetable or pasta of choice.


Yield:  6 servings
