GREEN ONION HAMBURGER STEAKETTES WITH BROWN ONION GRAVY
Tasty Green Onion Hamburger Steakettes smothered in a rich, savory homemade brown onion gravy that will tempt you to take seconds. Simple ingredients are needed for this comfort food supper. Mashed cauliflower is delightful with this meal as would be sauteed green beans or zucchini sticks. I used an orange/yellow cauliflower hence the color in the photo. If you don't care for cauliflower mash too much and you are doing moderate low-carbing, you could add a cooked potato to the cauli mash to make it more authentic-tasting. However, that said, I have a few cauli mash recipes that are sure to win you over. Try this one: Cauliflower, Cheddar and Bacon Casserole.
This is similar to Salisbury Steak; however, this is a lower calorie meal as I did not use the block of cream cheese in the gravy. It is a simpler meal and just as tasty. The trick is to use a tiny bit of commercial brown gravy mix. I plugged the nutritional analysis into my FoodSmart program, so it is accounted for in the carb count, not to worry.
Adding a little baking soda to onions that have fried up to the translucent stage, quickly turns them into golden brown caramelized onions. Such an awesome trick! Try it and you can thank me later. ;)
You can serve whatever cooked vegetables or even a salad with this meal. You can even serve it with cauliflower rice. The sauce or gravy is what makes this meal so tasty. There are no tomatoes in this meal. My husband enjoyed this meal with a light beer. This is a stick to your ribs meal for sure.
If you prefer you can mix ground beef and ground pork or ground Italian sausage or other sausage meat to make the steakettes and you could even make this with lamb instead. They are similar to burgers but with a twist. You could serve the meal with zucchini fries or eggplant fries or onion rings on the side or a lettuce or spinach salad. This meal is comfort food perfection. You could even potentially make this into a large free-formed meatloaf, bake in the oven and then pour the Brown Onion Gravy over top, if desired.
INGREDIENTS:
3 lbs lean ground beef (1.4 kg)
1 cup chopped green onions (250 mL)
PLUS more for garnish
2 tbsp coconut flour (30 mL)
1 tbsp minced garlic (15 mL)
3 large eggs
2 tsp Montreal steak seasoning (10 mL)
11/4 tsp salt (6 mL)
1 tsp black pepper (5 mL)
Olive oil for frying
Onion Gravy:
1 tbsp light olive oil (15 mL)
2 cups sliced onions (500 mL)
1/4
tsp baking soda (1 mL)
3 tbsp water (45 mL)
1 tbsp commercial brown gravy mix (15 mL)
1 cup water (250 mL)
In
large bowl, combine ground beef, green onions, coconut flour and minced garlic.
In
small bowl, whisk eggs with Montreal steak seasoning, salt and black pepper. Add to ground beef mixture and combine
well. Using a standard ice cream scoop,
make the steakettes and place in nonstick frying pan in a little olive oil if
the ground beef is very lean. Don’t
overcrowd the pan, but nevertheless if it is a big pan, you can get at least 6
or 7 in the pan. Fry until golden brown
on the one side, turn and do the same for the other side and then keep flipping
until they are cooked through. Repeat
with the remainder of the meat.
Scrape
the bits in the frying pan with a spatula.
In small bowl, combine water and brown gravy mix, stirring to
dissolve. Add to frying pan with meat
bits scraped up, along with water, which should be added gradually while
stirring over medium heat. Cook the
gravy until thickening and then add the onions which had been set aside. Serve with the hamburger steakettes and
sprinkle with more chopped green onions.
Onion Gravy: In nonstick frying pan in olive oil and over medium
heat, cook onions until soft and translucent.
Add baking soda and stir fry continuously until onions are golden brown
in color. Remove from pan and set aside.
Yield: 27 steakettes
