CHOCOLATE
Another chocolate recipe made in the blender - this time dark chocolate flavor as opposed to a milk chocolate flavor. We loved it especially as a sweet after dinner. It couldn't be easier to make and my husband is already begging me to make it again. That is a sign of a successful recipe for sure.
This chocolate is very smooth in texture and although not overly sweet, I think it is perfectly sweet enough for my very sweet tooth. This could count as dessert in a pinch.
This is not a fudge - this is more like simply a chocolate mixture. No added salt is necessary, as there is salt in the butter and whey protein powder. Don't you just love having some recipes that don't require the oven or stovetop. No eggs in this confection. I used a loaf pan as an 8-inch square dish would be too large.
INGREDIENTS:
5 tbsp heavy cream, divided (75 mL)
Liquid sweetener to equal 1/2 cup sugar (125 mL)
4 tbsp allulose (60 mL)
2 tbsp butter (30 mL)
11/2 tbsp boiling water (22 mL)
2 tbsp vanilla whey protein powder (30 mL)
2 tbsp powdered milk (30 mL)
6 oz unsweetened chocolate (180 g)
3 oz sugarless chocolate chips (90 g)
1/4
tsp vanilla extract, OR (1 mL)
other extract such as orange,
OR hazelnut extract
INSTRUCTIONS:
Grease
an 8 x 4-inch (20 x 10 cm) loaf pan and line with parchment paper.
In
blender, combine 3 tbsp (45 mL) heavy cream, liquid sweetener, allulose, butter,
boiling water, vanilla whey protein powder and powdered milk; blend until
smooth.
In
small bowl, combine unsweetened chocolate and chocolate chips along with 2 tbsp
(30 mL) heavy cream. Nuke 50 seconds and
stir. After that nuke in 20 second
increments until it is possible to stir it all together until smooth. Scrape all out into blender, adding vanilla extract,
OR extract of choice and blend until smooth.
Spread quickly in prepared loaf pan and freeze 20 minutes, then place in
refrigerator to further harden. Cut into
11 sections and then down the middle to make 22 servings.
