COFFEE PANNA COTTA
Coffee in the form of a delectable, creamy and rich dessert - yes please! An easy dessert for coffee lovers.
Panna Cotta is like a custard pudding made with gelatin instead of eggs. It is not overly sweet, yet has just the right amount of sweetness with great coffee flavor. Chill in the fridge until set. Sprinkle with grated unsweetened chocolate, if desired and top with a raspberry. Choose pretty glass dishes or ramekins to display the pudding. This creamy dessert is sure to become a favorite with your guests after a fancy meal. The cream mixture is just perfect. Keep in the refrigerator until serving time.
Coffee in dessert form will be the perfect coffee fix after a meal. Even as this pudding approaches room temperature, it is spectacular tasting. You could serve this pudding alongside some low-carb cookies.
1 cup low-carb milk of choice (250 mL)
1 tbsp instant coffee (15 mL)
(decaffeinated or caffeinated)
11/2 tsp unflavored gelatin (7 mL)
Liquid sweetener to equal 1 cup sugar (250 mL)
1/8 tsp salt (0.5 mL)
1 cup heavy cream (250 mL)
1/2
tsp vanilla extract (2 ml)
INSTRUCTIONS:
In
small bowl, combine 1/4 cup (60 mL) milk with gelatin and
instant coffee. Stir and allow gelatin to
bloom about 10 minutes.
In
saucepan, heat remainder of milk with liquid sweetener and salt to steaming hot
but not boiling.
Stir
in coffee gelatin mixture and heat 10 seconds. Do not boil. Set aside to cool 30 minutes.
Strain
mixture through a fine mesh sieve into a bowl. Stir in half the heavy cream. Add vanilla extract to the other half of the cream
and whip until soft peaks form. Fold into
the pudding. Pour into containers, cover
with plastic wrap and refrigerate.
