MAPLE WALNUT CHOCOLATE SQUARES

These decadent squares are impossible to resist!  The drizzle of Maple Icing takes these squares over the top.  These Maple Walnut chocolate Squares are sugar-free, low-carb and gluten-free but they taste like they came straight from a high-end bakery.  These aren't just "diet" treats - they're thick, fudgy squares topped with a velvety cream cheese glaze.


After chopping the walnuts (can use a food processor with a pulse button), sieve the nuts using a colander with larger holes than a fine sieve, to get rid of the loose walnut skins which can make the squares bitter. 


Instead of butter, I used light-tasting olive oil.  Keep leftovers in an airtight container in the refrigerator.  You can use a large bowl and hand mixer for this recipe.


When lining the baking dish, I like to create a parchment overhang for easier removal of the squares.









INGREDIENTS:

2 large eggs

1/2 cup olive oil (125 mL)

Liquid sweetener to equal 3/4 cup sugar (175 mL)

1 tsp maple extract (5 mL)

1 cup Gluten-Free Bake Mix 2, OR (250 mL)

  11/4 cups Keto Bake Mix (300 mL)

1/2 tsp baking powder (2 mL)

1/8 tsp salt (0.5 mL)

1 cup walnuts, chopped (250 mL)

1/2 cup sugarless chocolate chips (125 mL)

Maple Glaze:

1 oz cream cheese, softened (30 g)

1/4 cup heavy cream (60 mL)

Liquid sweetener to equal 2 tbsp sugar (30 mL)

1/4 tsp maple extract (1 mL)

 

INSTRUCTIONS:

Preheat the oven to 350°F (180°C).  Line an 8-inch (20 cm) square pan with parchment paper after spraying the pan with nonstick cooking spray to help the paper adhere.

 

In food processor or in bowl with mixer, mix eggs, olive oil, liquid sweetener and maple extract.

In medium bowl, combine Gluten-Free Bake Mix 2, OR Keto Bake Mix, baking powder and salt.  Add the dry ingredients to the wet ingredients; mix.  Stir in the walnuts and chocolate chips.

 

Maple Glaze:  In medium bowl, whisk together cream cheese (nuke briefly if need be to soften), cream, liquid sweetener and maple extract.  Drizzle or spread over the Maple Walnut Chocolate Squares.
