MEXICAN CHEESE GREEN ONION CHICKEN BAKE

It is a keeper recipe. Such a simple recipe is perfect for weeknights. If you have a lot of green onions on hand, this is a great little recipe.


Mix up the topping and spoon over top of the chicken breasts in a baking dish.  Sprinkle with Mexican cheese and bake. Easy!  If you like you can garnish the baked chicken with cilantro and chopped tomato.


There are no real spices in this recipe; feel free to be creative with spices such as cumin.  This tender chicken would be good served with sour cream, if desired.  Really cool that veggies are built into this easy Mexican casserole or Mexican chicken bake.  I call it a Mexican chicken casserole, but it is only really because of the cheese.  Feel free to add some taco seasoning to the cream cheese mixture.- or chili powder, or green chilies or jalapeno.


I usually just eyeball my chicken after cutting into it.  After years of cooking chicken I know when it is done, but feel free to use an instant-read thermometer.









INGREDIENTS:

3 large chicken breasts

Seasoning salt, OR salt and pepper

4 oz cream cheese, softened (125 g)

1/4 cup mayonnaise (60 mL)

3/4 cup grated Mexican cheese (175 mL)

1 cup chopped green onions (250 mL)

1/2 cup cooked bacon bits (125 mL)

2/3 cup grated Mexican cheese (150 mL)

 

INSTRUCTIONS: 

Preheat the oven to 350°F (180°C). 

 

Season chicken breasts liberally on both sides with seasoning salt or with salt and pepper.  Place in a casserole dish. 


In food processor, process cream cheese and mayonnaise.  Add 3/4 cup (175 mL) Grated Mexican cheese; process.  Add green onions; process very briefly using the pulse button.  Stir in bacon bits, reserving some for topping the chicken later.

 

Spread the cream cheese mixture over top of the chicken breasts.  Sprinkle with 2/3 cup (150 mL) grated Mexican cheese.

 

Bake 40 to 50 minutes, or until the chicken is cooked through.  The timing depends on the thickness of your chicken breasts.  After about 35 minutes once the topping is golden brown in places, cover lightly with foil and continue to cook until the chicken is done.  Garnish with reserved bacon bits and additional chopped green onions, if desired.
