SAVORY, SWEET AND SPICY GROUND BEEF AND PEPPERS

This tasty meal makes a quick and easy weeknight dinner. You are probably thinking that this is not going to be that great.  Don't be fooled.  My husband and I loved this!  Trust me on this one. 

You could serve it with delicious sauteed cauli rice instead of white rice, if desired, or simply with a big salad of your choosing. If you cook the minced green bell peppers (use a food processor and the pulse button) really soft, the vegetables will not be perceptible in the cooked meat which might be a good thing for people who are adverse to them.  The flavor or taste of the meat is not affected.  You can substitute chopped green onions, if desired.  That is the more usual add-in for this meal.


If you prefer you can make this dish with ground turkey or chicken.  You may use low-sodium soy sauce.  I used organic soy sauce.  This ground beef stir fry is bound to become an easy favorite.  Remember to cook in a large skillet, preferably nonstick.  The stir fry sauce is delicious.  No tomatoes in this dish.  


This meal could be nice served with broccoli salad.  A sprinkle of Parmesan cheese on top of the meat would add savory notes.









INGREDIENTS:  

2 tbsp light olive oil (30 mL)

1 medium onion, chopped

1 cup finely chopped green peppers (250 mL)

1 tbsp minced garlic (15 mL)

1 tsp ground ginger (5 mL)

2 lbs lean ground beef (1.9 kg)

1/4 cup organic soy sauce (60 mL)

1/4 cup sweetener (60 mL)

1 tsp red pepper flakes (5 mL)

1/2 tsp salt (2 mL)

1/2 tsp black pepper (2 mL)

Garnish:

Sesame seeds for garnish, optional (OR sprinkle

  with red pepper flakes

Chopped green peppers or green onions


INSTRUCTIONS: 

In large, nonstick skillet or frying pan in olive oil and over medium heat cook onion until softening.  Add green peppers and cook until semi tender.  Add garlic and ginger.  Add ground beef and cook until browned.  In small bowl, whisk together soy sauce, sweetener, red pepper flakes, salt and black pepper.  Stir into meat until well combined.  Cook a little longer.  To serve, mound the meat on a platter and sprinkle with chopped green peppers and sprinkle with sesame seeds or red pepper flakes (the latter will add to the heat of this dish).
