This delicious weeknight supper couldn't be easier. Mix the topping and place on top of each chicken breast, sprinkle with cheese and bake! We all need a break from time to time in the kitchen; however, we still need to eat. This recipe is a lifesaver in that manner.
This meal goes well with just about anything. If you only have time for a salad, that works as well. Since potatoes are a no no, mashed cauli or cauli rice would be good substitutes, or even mashed turnips or rutabaga.
In a pinch, you could use garlic powder instead of minced garlic. This cheesy baked chicken recipe is a good recipe to keep in your low-carb arsenal for lazy cooking days, and I believe we all have those for various reasons. Many times it is simply being a busy mom. This simple recipe is a kid-friendly recipe, which is a bonus. You may not even have to go to the grocery store for ingredients as this is a pretty basic recipe high on flavor though. Prep time is so easy and only one bowl and pan is necessary. Chicken is placed in one layer. If you like you can first drizzle the chicken breasts with olive oil to ensure super moist chicken breasts.
5 large chicken breasts
Seasoning salt, to taste
6 oz cream cheese, softened (180 g)
2 tbsp mayonnaise (30 mL)
1 tsp minced garlic (5 mL)
1 cup shredded Cheddar cheese (250 mL)
OR a mix of Cheddar and
Mozzarella
1/4
cup chopped chives, plus more for garnish (60 mL)
1/2
cup bacon bits (125 mL)
INSTRUCTIONS:
Preheat the oven to 375°F (190°C).
Sprinkle chicken breasts lightly with seasoning salt. Place them in a large baking dish. In medium bowl, combine cream cheese, mayonnaise, minced garlic, half the cheese and the chopped chives. Top chicken breasts with this mixture. Sprinkle with remaining cheese.
Bake about 45 minutes, or until the chicken is cooked through (white throughout and no pink showing). Top with bacon bits and more chives.
