An easy, quick and most delicious weeknight chicken supper recipe! Simple comfort food is often just the ticket when one is not really in the mood for complicated.
Since potatoes are a no-no, and creamy mashed potatoes are out, why not serve this meal with delicious cauli mash or my cauli mash on steroids, or if you are in maintenance add one potato to the cauli mash and mash it in for more texture and authenticity. Instead of rice you could use a tasty stir-fried cauli rice.
Making it a mushroom and onion mixture is tastier than just one of these considering there is no gravy with this chicken.
If you don't have fresh or bottled garlic, use garlic powder.

INGREDIENTS:
3 boneless chicken breasts, cut in half lengthwise
2 tsp Montreal chicken seasoning (10 mL)
1/2 tsp black pepper (2 mL)
11/4 cups grated Mozzarella, OR Monterey Jack cheese (300 mL)
1 onion, diced
8 oz mushrooms, sliced (226 g)
2 tbsp butter (30 mL)
2 tbsp light olive oil (30 mL)
2 tsp minced garlic (10 mL)
Montreal chicken seasoning, to taste
Black pepper, to taste.
1 tbsp apple cider vinegar (15 mL)
Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper after first lightly greasing the baking sheet with cooking oil spray. This helps the parchment paper to adhere better.
Sprinkle prepared chicken cutlets with Montreal Chicken seasoning and black pepper.
In large nonstick frying pan heat half butter and olive oil. Sear chicken 3 minutes on both sides over medium high heat. Do not crowd the pan. Cook the chicken in 2 batches.
Place semi-cooked chicken on prepared pan.
In the frying pan, sauté onions and mushrooms over medium heat. Towards the end of cooking add garlic and sprinkle with Montreal chicken seasoning and black pepper, to taste. Add vinegar to deglaze pan at the end of frying. Stir. Pile mushroom and onion mixture on top of each chicken breast. Top with shredded cheese of choice. Bake 10 minutes until cheese is melted and chicken is cooked through.
