COTTAGE CHEESE LEMON
PUDDING
Blending cottage cheese with simple ingredients into a smooth pudding makes a protein-packed dessert that satisfies and does not sabotage one's low-carb diet. Even if you are not a fan of cottage cheese, I think you will enjoy this pudding.
I used a high speed blender, but in a pinch you could use an immersion blender in a bowl. I am not sure a food processor will blend the cottage cheese smooth enough. Keep leftovers in an airtight container in the refrigerator as fridge temperatures make this low carb pudding with lemon flavor taste best.
The easy blueberry sauce is worth making as it takes this dessert to another level with flavors and textures dancing delightfully on one's taste buds. The sweetness of this dessert can be tailored to suit your own taste buds. If you don't want to make a blueberry sauce, you could simple drizzle a little honey substitute or low-carb maple syrup over the dessert.
Blueberries are full of anti-oxidants. I think the type of cottage cheese matters. I like to use a small curd texture full-fat cottage cheese with protein-packed goodness. If you like you can top this pudding with fresh fruit such as raspberries. When you have cravings for protein and dessert, this will be a great pudding recipe to return to. It is a fantastic addition to a keto diet. Instead of lemon juice you could use lime juice. This is like a cottage cheese lemon mousse but more like a pudding actually. You can serve it in dessert cups.
This is the perfect dessert when you want to increase your daily protein intake. There is quite a bit of versatility in this recipe, so you can play with it and come up with your own variation. If you like you can simply cover the top of the dessert in the dessert cups with plastic wrap and place in the refrigerator. It is amazing how you blend cottage cheese and achieve these sorts of results. 21.8 grams of protein! Pretty up this dessert with whipped cream using a piping bag.
INGREDIENTS:
21/4 cups full-fat cottage cheese (560 mL)
1/3
cup vanilla whey protein (75 mL)
4 tbsp allulose (60 mL)
Liquid sweetener, to taste
2 tbsp fresh lemon juice (30 mL)
2 tsp lemon zest (10 mL)
1 tsp vanilla extract, OR
1/2 tsp
lemon extract (2 mL)
3 tbsp whipping cream (45 mL)
Blueberry Sauce, optional (click for recipe)
INSTRUCTIONS:
In blender, combine cottage cheese vanilla whey protein, allulose, liquid sweetener, lemon juice, lemon zest, vanilla extract, OR lemon extract and whipping cream; blend until smooth. Pour into 4 ramekins or other serving dishes. Chill well before serving. Serve with Blueberry Sauce, if desired.
