FLATBREAD AND CHEESE-FILLED FLATBREAD

These flatbreads are so tasty and the cheese-filled flatbread will make you think that grilled cheese sandwiches are boring in comparison.  Someone pointed out that they look like Papusas? You will love this with butter or simply plain. I like it with butter and a drizzle of sugar-free "honey". The underneath is crispy and golden brown and the top is soft and cheesy.  Typically one is more than enough in one sitting. Delicious and a recipe I will return to often.










Ingredients:

2 cups grated Mozzarella cheese (500 mL)
2 oz cream cheese (60 g)
  2/3 cup Keto Bake Mix
1/tsp baking powder (2 mL)
2 eggs, fork beaten
1/2 tsp Italian seasoning (2 mL)
For cheese-filled Flatbread:
1 tbsp grated Mozzarella cheese (15 mL)


Instructions:

Preheat the oven to 350°F (180°C).

In bowl, combine Mozzarella cheese and cream cheese.  Melt cheeses in microwave oven about 1 minute and 30 seconds.  Place Gluten-Free Bake Mix 2, OR Keto Bake Mix and baking powder on top.  Add beaten eggs mixed with Italian seasoning and mix well until a moist, cohesive dough forms.  Divide dough ball into 5 balls weighing approximately 3 oz (90 g) each.

Between two pieces of plastic or use parchment paper, roll out balls to about 5-inch (12.5 cm) rounds.  For cheese-filled flatbreads, place 1 tbsp (15 mL) grated Mozzarella cheese in center or circle and fold over to enclose, making a ball and flatten the ball with your hands into a round, flat shape again.  It will be slightly smaller in circumference than the unfilled flatbreads. Place flatbreads on parchment paper on cookie sheet and bake 16 to 20 minutes, or until golden brown underneath.

Helpful Hints:  I used the grated Mozzarella cheese that is sold in packages at Price Smart in Central and South America or Costco in the States. You may use freshly grated Mozzarella, although you may find you get only 4 servings. Also, I didn't make all of them in one day.  You can refrigerate the dough balls for several days; nuke 10 seconds or so and press it out and bake!  I suspect you can also freeze unused dough balls. 

Yield:  5 servings (the Keto Bake Mix typically shaves off 1 gram carb per serving in my recipes!)
