SLOW-COOKER BACON-WRAPPED 

PORK LOIN

Wrapping the pork in bacon kept all the yummy flavors in as well as the juices, making for a flavorful and moister pork loin. If you can use a thicker bacon; even better! We loved this and as per usual I could not help adding a bit of sweetness to the savory pork so that one can enjoy the sweet and salty savory flavors together.  Delicious! I will make this again.









Ingredients:

3 lbs pork loin, trimmed of excess fat (1.45 kg)

2 tbsp bacon fat, OR olive oil (30 mL)

1 tsp salt (5 mL)

1 tsp seasoning salt (5 mL)

1/2 tsp black pepper (2 mL)

1/3 cup powdered sweetener of choice (75 mL)

2 tbsp crushed, minced garlic (30 mL)

  (I used the bottled kind from Costco)

2 tsp molasses (10 mL)

8 slices bacon

 

Instructions:

In large skillet, brown pork loin on both sides in bacon fat, OR olive oil. 

In small bowl, mix salt, seasoning salt and black pepper.  Rub over the pork loin. 

In another small bowl, combine powdered sweetener, garlic and molasses. Spread over top of the seasoned pork.  Wrap the pork with bacon and carefully lower into the slow-cooker.  Cook on low heat about 5 or 6 hours.  If bacon is not browned to your liking, you can always place the pork underneath an oven broiler for a minute or two, however, I did not find it necessary.
