4 thin boneless pork cutlets

3 tbsp Gluten-Free Bake Mix 2, OR almond flour (45 mL)

2 tbsp Parmesan cheese (30 mL)

1/2 tsp salt (2 mL)

2 tbsp light-tasting olive oil (30 mL)

1 tbsp butter (15 mL)


In small bowl, combine Gluten-Free Bake Mix 2, OR almond flour, Parmesan cheese and salt.  Spoon breading over pork cutlets on both sides. 

In large frying pan in olive oil and butter, fry breaded pork cutlets, turning frequently until golden brown on both sides and cooked through.

Yield:  4 servings
