This classic chicken salad is not off the table for moderate low-carbers, and I am pleased about that!  It is a classic for a reason; so tasty and a very filling lunch that is bound to satiate for hours.  There is enough protein in the salad is why, plus enough fat and fiber - all of which satisfy the appetite very well.

The first time I ever enjoyed Chicken Waldorf salad was when my husband's sister made it for us, while we were visiting her in Washington in the USA.  So beautiful there in the countryside by the way!

I love the various textures in this salad as well as the mix of sweet and savory.  Salt and pepper can be added to taste.   Besides the textures, though, this is a very creamy salad, but if you prefer you can cut back a little on the mayonnaise, and thus reduce the calories as well.  If you prefer you could use a combination of mayonnaise and sour cream (or Greek yogurt) in the dressing.

If you dislike walnuts, you may use pecans instead.

Using cooked chicken from a rotisserie chicken is the easiest; however, you could use cooked chicken breasts, diced, instead. Commonly used are grapes in Chicken Waldorf Salad but at 1 g carb per grape, that does not make any sense at all for us.

2/3 cup mayonnaise (150 ml)

1 tbsp lemon juice (15 mL)

1/4 tsp salt (1 mL)

1/4 tsp black pepper (1 mL)

2 cups chopped cooked chicken (500 mL)

1 apple, cored and chopped

2/3 cup sliced celery (150 mL)

Chopped walnuts for garnish, optional



In medium bowl, whisk together mayonnaise, lemon juice, salt and black pepper. Stir in chicken, chopped apple and celery. Cover and refrigerate until serving time.  Garnish with walnuts, if desired.
