MOST DELICIOUS CABBAGE SIDE  

This is the most delicious cabbage side ever!  I love sweet and savory flavors.  So good!  Not too acidic and just tasty enough for me!  If you like vinegar, feel free to add up to 2 tbsp (30 mL) apple cider vinegar.  One could use chayotes instead of the apple for lower carbs.  


I think I have never made a cabbage side that I have enjoyed as much as this one.  I made it twice in a row, and that says something, as I am always trying new recipes for my blog and Facebook.


If you wanted to add some protein to this dish, I would add some chopped up, cooked ham.  That would be a delicious addition as cabbage and ham go so well together.


Do not skip the sweetener as this is what makes this dish so delicious - mixing sweet and savory flavors.  This cabbage side goes very well with pork.


One thing I have never made is roasted cabbage.  I need to try that some time.  I love making cabbage rolls; that is always so well received.


I like my cabbage tender, but some of you might like it tender crisp.


I didn't add garlic or onions to this dish, but you certainly can, if you desire.


Cabbage is sometimes green when you buy it and sometimes more white, but they both taste the same.  Of course, you can also buy red cabbage, which adds great color, especially when mixed with green cabbage.


 








Ingredients:

10 cups shredded cabbage (2.5 L)

  (1 fairly large cabbage)

1 large apple, OR chayote squash

2 tbsp butter (30 mL)

1 tsp salt (5 mL)

1/tsp black pepper (1 mL)

1 cup water (250 mL)

1/cup powdered sweetener of choice (60 mL)

1 tsp molasses (5 mL)

1 tsp apple cider vinegar (5 mL)

 

Instructions:

Shred cabbage.  Peel, core and dice apple, OR chayote squash.  In nonstick frying pan, melt butter and over medium low heat, cook cabbage and apple.  Season with salt and pepper.  Cook about 5 to 8 minutes.  Add water, reduce heat and simmer about 10 minutes.  Add powdered sweetener, molasses and vinegar.  Cook a few minutes longer.


Yield:  8 servings
