PEANUT BUTTER GREEK YOGURT INSTANT PUDDING

 

Ready in 1 minute, this is a phenomenal pudding.  It keeps the same very smooth, thick and pudding-like consistency even in the fridge after many hours.  


This creamy smooth pudding lends itself to adding some texture like chopped nuts or toasted coconut on top.


You can replace some of the yogurt with sour cream, if desired.  I find when I eat plain Greek yogurt, I like to add a bit of sour cream - just tastes better to me.


You could change up the flavor by using almond butter instead of peanut butter.  You can also change it up by adding some cocoa. 


This is super easy and super quick to make - you have your pudding in a minute or two.


Very Important, please note: Happily, the Go-Diet authors, Jack Goldberg and Karen O'Mara changed my outlook with regard to these products.  The live cultures, such as lactobacillus are hugely beneficial to your health in many ways, not the least of which is helping combat yeast overgrowth, promoting colon health and boosting the immune system.  According to laboratory studies, 1 cup (250 mL) plain yogurt contains only about 4 grams of carbohydrate, since these live bacteria have changed the lactose into lactic acid, and this is not taken into account in the nutritional analysis.  Daily consumption of yogurt is therefore recommended.  I used this information to plug into my FoodSmart program to do the nutritional analysis for this pudding recipe.










Ingredients:

2 cups plain Greek yogurt (500 mL)

3/4 cup whipping cream, OR (175 mL)

  1/4 cup cream (60 ml)  and 1/2 cup almond milk (125 mL)

2/3 cup smooth peanut butter (150 mL)

  (I used Skippy Natural)

Liquid sweetener to equal 1 cup (250 mL)

  sugar, OR sweetener of choice

2 tsp vanilla extract (10 mL) 

 

Instructions: 

In food processor, combine Greek yogurt, whipping cream, peanut butter, liquid sweetener, OR sweetener of choice and vanilla extract.  Process until smooth. Chill or eat right away.


Yield:  7 servings

1/2 cup: cream/almond milk
