CREAMY ITALIAN DRESSING

This creamy Italian-style dressing is our new favorite!  It has a creamy base with red wine vinegar, lemon juice and herbs plus Parmesan cheese. Homemade dressings are so much fun and taste much better than store-bought dressings, in my opinion, plus you know what goes into them.


It is so quick and easy to make this zesty Italian dressing.  The red wine vinegar, sour cream and lemon juice lend a tangy flavor to the dressing.  Lately, I am just always making sure this dressing is in the fridge. I put it on all kinds of things, not just salads.


I didn't use fresh Parmesan cheese, but you can add a sprinkling of fresh Parmesan cheese on top of your dressing and garden salad. Yummy!  I always have Parmesan in a cannister available in the fridge and it is quite lovely in this recipe.  If you want to go fresh Parmesan cheese all the way, make sure it is finely grated. To blend the dressing, simply use a whisk.











Ingredients:

11/3 cup mayonnaise (325 mL)

1/4 cup sour cream (60 mL)

1/4 cup light-tasting olive oil (60 mL)

2 tbsp red wine vinegar (30 mL)

2 tsp fresh lemon juice (10 mL)

11/2 tsp sweetener (7 mL)

1 tsp dried parsley (5 mL)

1/2 tsp onion powder (2 ml)

1/2 tsp Italian seasoning (2 mL)

1/4 tsp granulated garlic powder (1 mL)

1/4 tsp dried basil (1 mL)

1/8 tsp salt (0.5 mL)

3 tbsp Parmesan cheese (45 mL)

  (kind in a canister)


Instructions: 

In medium bowl, combine mayonnaise, sour cream, olive oil, red wine vinegar, lemon juice, sweetener, parsley, onion powder, Italian seasoning, granulated garlic powder, basil and salt.  Whisk with a wire whisk until smooth.  Whisk in Parmesan cheese.  Chill until serving time.


Yield:  2 cups (500 mL)
