CUCUMBER, AVOCADO AND TOMATO SALAD

A summer fresh salad that is sure to please at just about any table, picnic or BBQ.  If you have your own garden tomatoes and cucumbers, even better! 


Such a delicious salad shouldn't be so simple, but yet it is!  I think some Feta Cheese crumbled over the top would be good as well, for a variation on this salad.


I didn't have red onion, but that would be prettier in this salad.  I sliced the onion and didn't chop it, as that looks prettier as well.


Fresh ingredients like this shout summer, but they are also so good for you as well.  Raw vegetables are very healthy to eat in abundance.  The first ripe tomatoes from the garden are such a treat!

Tomatoes are rich in vitamin C and cucumbers have antioxidants.  Avocadoes have more potassium in them than bananas.


The dressing is light, bright and refreshing!  You can use lime juice instead of lemon juice, if you prefer.  The taste is like a taste of summer!


The flavors of this salad are delicious, and if you love fresh vegetable salads, you must have this one in your collection of recipes to try. These veggies are the best!









Ingredients:

1 English cucumber, sliced

2 cups chopped Roma tomatoes (500 mL)

2 avocadoes, cubed

3 tbsp chopped onion (45 mL)

  (red onion would be good)

Dressing:

2 tbsp fresh lemon juice (30 mL)

2 tbsp extra-light olive oil (30 mL)

1 tbsp white vinegar (15 mL)

1 tsp mustard (5 mL)

1 tsp honey substitute, optional, OR sweetener (5 mL)

1 tsp salt (5 mL)

1/8 tsp black pepper (0.5 mL)


Instructions: 

In large salad bowl, combine cucumber, Roma tomatoes, avocadoes and onion.  Pour dressing over vegetables and toss to coat. Chill.

 

Dressing:  In medium bowl, whisk together lemon juice, olive oil, white vinegar, mustard, honey substitute, OR sweetener, salt and black pepper.


Yield: 6 servings
