HAM AND CHEESE PUFFS

This recipe makes a wonderful appetizer or light supper if you have a nice salad prepared as well.  These Puffs are chock-full of ham and so tasty, even on their own, but fun to use the Sweet Spicy Tomato Sauce for dipping, as that makes them that much more special.


The next day, kept at room temperature the whole time (no more than 24 hours and they should be refrigerated due to the cheese in them), they are delightfully soft and chewy. I like them on their own with a glass of C-Light drink on the side to give the sweet and savory taste which I love, but they are still best served with the sauce for dipping.  They almost taste like pizza bites but not quite.


I have another Puff recipe - Bacon and Onion Puffs which I will link to below this recipe.  These make awesome appetizers that no one will turn down, and I think they will fly at a party.  In fact, I am thinking of adding them to my next get-together with dear friends of ours.  I think they will love them!


These made a fun late night snack for my husband and me and today I am still enjoying them.  If Ian doesn't hurry, there will be none left over for him!


I used deli ham but you could use any leftover ham for this recipe as well.


I did not add the sauce in the nutritional analysis as we had so much left over.  It is impossible to tell how much one would use.










Ingredients:

3 oz cream cheese (90 g)

2 large eggs

1/4 tsp minced garlic (1 mL)

1/4 tsp Italian seasoning (1 mL)

1 cup Gluten-Free Bake Mix 2, (250 mL)

  OR 11/4 cups Keto Bake Mix, (300 mL)

  OR almond flour PLUS 1 tbsp oat fiber (15mL)

1 tsp baking powder (5 mL)

11/2 cups shredded Mozzarella cheese (375 mL)

2 cups chopped ham (500 mL)

  (Deli ham which has been cut a bit thicker)

Sweet Spicy Tomato Sauce:

14.5 oz can diced tomatoes (411 g)

3 oz tomato paste (90 g)

1/4 cup water (60 mL)

1/4 tsp salt (1 mL)

1/4 tsp basil (1 mL)

1/4 tsp oregano (1 mL)

1/4 tsp thyme (1 mL)

1/8 tsp black pepper (0.5 mL)

Liquid sweetener, to taste

Hot sauce, to taste

 

Instructions:

Preheat the oven to 350°F (180°C).  Grease well or line a baking sheet with parchment paper.

 

In food processor, or in bowl with mixer, process cream cheese, eggs, garlic and Italian seasoning.  In small bowl, combine Gluten-Free Bake Mix 2, OR Keto Bake Mix, OR alternative. Add dry ingredients; process. Add Mozzarella cheese; process.  Stir in ham.  Using a cookie scoop (2 tbsp; 30 mL) form balls of dough, trying to incorporate the ham in it as best you can.  Place the balls on the prepared baking sheet.  Bake 18 to 20 minutes or until deep golden brown underneath.  Allow to cool 5 minutes on the pan before removing.  Serve with the Sweet Spicy Tomato Sauce. 

 

Sweet Spicy Tomato Sauce:  In saucepot, combine diced tomatoes, tomato paste, water, salt, basil, oregano, thyme and black pepper.  Bring to the boil and simmer 8 to 10 minutes until thicker.  Use a potato masher to mash the tomatoes until the consistency you prefer. 


Yield:  18 servings
