SLOW-COOKER MONGOLIAN BEEF

Sweet meats!  With the ginger, garlic and soy sauce, you might remember a Chinese meal.  Very tasty!  Very easy to prepare and then place in the slow-cooker and 2 or 3 hours later, dinner is served!  Sometimes easy, simple meals are the ones that often get you rave reviews.  My husband really appreciated his meal.  It is definitely because the steak is so tender and flavorful.  This sweet and spicy meat with plenty of sauce will delight.  You could serve it with cauli-rice, if desired.  

 

No need to first brown the steak.  Now that greatly simplifies things and makes it real quick to get this meal going in the slow-cooker. 










Ingredients:

11/2 lbs thinly sliced flank steak, OR sirloin steak (0.68 kg)

1/4 cup Gluten-Free Bake Mix 2, OR almond flour (60 mL)

1 tsp cornstarch (5 mL)

Mongolian Sauce:

3/4 cup reduced sodium soy sauce (175 mL)

1/2 cup water (125 mL)

2 tbsp light-tasting olive oil (30 mL)

2 tbsp minced garlic (30 mL)

2 tsp minced fresh ginger (10 mL)

2 tbsp honey substitute (30 mL)

2 tsp molasses, optional (10 mL)

Sweetener of choice to equal 1/2 cup sugar (125 mL)

1 tsp red pepper flakes (5 mL)

1/2 cup shredded carrots (125 mL)

  (or more if you have the carb allowance)

Garnish:

Green onions, chopped

Sesame seeds



Instructions: 

 

Place beef in large bowl and toss with Gluten-Free Bake Mix 2, OR almond flour and cornstarch.

 

Mongolian Sauce:  In medium bowl, combine soy sauce, water, olive oil, garlic, ginger, honey substitute, molasses (if using), sweetener and red pepper flakes.  Stir in grated carrots.  Place this sauce in the bottom of the slow cooker. Gently add the coated steak and coat with the sauce. 

 

Place slow-cooker on high 2 to 3 hours.  Serve over cauli-rice and with a lovely salad on the side or another cooked vegetable.
