CREAMY BALSAMIC DRESSING

This creamy Balsamic Dressing is another new favorite!  It has a creamy base with balsamic vinegar and herbs plus Parmesan cheese. Homemade dressings are so much fun and taste much better than store-bought dressings, in my opinion, plus you know what goes into them.


It is so quick and easy to make this zesty Balsamic dressing.  The balsamic vinegar, lemon juice and sour cream lend a tangy flavor to the dressing.  I made this recipe for our salad when we were expecting company.  I didn't have the ingredients to make my Creamy Italian Dressing, so this recipe was born!  Our guests and Rian, in particular, loved this dressing.  He asked me for the recipe.  The ultimate compliment!


I didn't use fresh Parmesan cheese, but you can add a sprinkling of fresh Parmesan cheese on top of your dressing and garden salad. Yummy!  I always have Parmesan in a cannister available in the fridge and it is quite lovely in this recipe.  If you want to go fresh Parmesan cheese all the way, make sure it is finely grated. To blend the dressing, simply use a whisk.  No need to haul out your blender.


















Ingredients:

1 cup mayonnaise (250 mL)

1/cup sour cream (60 mL)

1/cup light-tasting olive oil (60 mL)

2 tbsp Balsamic vinegar (30 mL)

2 tsp lemon juice (10 mL)

1 tsp sweetener (5 mL)

1 tsp dried parsley (5 mL)

1/tsp granulated garlic salt (1 mL)

1 tbsp Parmesan cheese (15 mL)

  (kind in a canister)


Instructions: 

In medium bowl, combine mayonnaise, sour cream, olive oil, Balsamic vinegar, lemon juice, sweetener, parsley, and granulated garlic salt.  Whisk with a wire whisk until smooth.  Whisk in Parmesan cheese.  Chill until serving time.


Yield:  1 1/2 cups (375 mL)
