VANILLA CREAM CHEESE COOKIES

This plain cookie is a keeper recipe with the cream cheese and vanilla flavor coming through very nicely. They flew between Ian and me – by midday the next day, they were all gone. They would lend themselves to your favorite low-carb icing/frosting for special occasions – they have a nice flat surface and are firm cookies. These cookies have no butter in them, but this makes them a firmer cookie.  You can even keep these cookies at room temperature. If you decide to add 2 tbsp (30 mL) of butter to the recipe, for instance, the cookies will be softer, more moist and will have to be refrigerated.  These cookies without butter are a drier cookie and almost like store-bought, but not quite. 

I also think you could flavor these cookies with spices like ginger or lemon zest for the holidays.  I am going to experiment.  I am wondering if one could roll these out and make Gingerbread Men.  That is something I should look into next with these cookies.









Ingredients:

4 oz cream cheese, softened (125 g)

Liquid sweetener to equal 3/4 cup sugar (175 mL)

1/4 cup bulk sweetener of choice, OR more liquid sweetener

2 egg yolks

1 tsp vanilla extract (5 mL)

11/2 cups Gluten-Free Bake Mix 2, (375 mL)

  OR 13/4 cups Keto Bake Mix, OR (425 mL)

  almond flour plus 2 tbsp oat fiber (30 mL)

1/2 tsp baking powder (2 mL)

 

Instructions:  

Preheat the oven to 350°F (180°C). 

 

In food processor or in bowl with mixer, process cream cheese, liquid sweetener, bulk sweetener of choice, OR more liquid sweetener, egg yolks and vanilla extract.

 

In medium bowl, combine Gluten-Free Bake Mix 2, OR Keto Bake Mix, OR oat fiber alternative and baking powder.  Whisk to combine.  Add dry ingredients to wet ingredients and process until combined. 

 

Form 1 tablespoonfuls (15 mL) of dough and place on ungreased cookie sheet.  Flatten and gently form into a round shape with the back of a teaspoon.  Bake about 10 minutes or until golden brown underneath.  Allow to cool on the baking sheet. Keep at room temperature for up to two days.
